Cottage Cheese Egg Bites: The Ultimate High-Protein Breakfast

These cottage cheese egg bites are fluffy, protein-packed, and perfect for a quick and nutritious breakfast or post-workout snack

 

Ingredients

Scale
  • large eggs
  • ¾ cup low-fat or full-fat cottage cheese
  • ½ cup shredded cheese (cheddar, Swiss, feta, or mozzarella)
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon baking powder (optional)
  • ½ cup chopped spinach, bell peppers, mushrooms
 

Instructions

Preheat oven to 350°F (175°C). Grease a muffin tin or use silicone liners.

In a blender, combine eggs, cottage cheese, salt, pepper, and baking powder (if using). Blend until smooth.

Stir in shredded cheese and optional ingredients.

Pour mixture into muffin tin, filling each about ¾ full.

Bake for 20–22 minutes until set and golden. A toothpick should come out clean.

Let cool 5 minutes before removing. Serve warm or store for later.

Notes

For fluffier egg bites, bake with a water bath or blend well to aerate the mixture.
