  • 2 cups all-purpose flour
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ cup unsalted butter (softened)
  • ½ cup honey
  • ½ cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup buttermilk
  • 1½ cups fresh peaches, peeled and diced

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Prepare the peaches (fresh or well-drained canned).
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In another bowl, cream the butter, honey, and sugar until light and fluffy.
  5. Beat in eggs one at a time, then add vanilla.
  6. Alternate adding the dry ingredients and buttermilk, mixing after each addition.
  7. Gently fold in diced peaches.
  8. Fill cupcake liners ¾ full with batter.
  9. Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
  10. Let cool completely before frosting if desired.

Notes

Use room temperature ingredients and avoid overmixing the batter for the best texture. A drizzle of honey on top before baking adds extra flavor.
