Rum Fried Pineapple – The Ultimate Caramelized Tropical Treat

Juicy pineapple rings marinated in sweet tropical juice and lightly coated in spiced flour, then fried until golden brown. A halal, alcohol-free twist on a Caribbean-style dessert—crispy, warm, and irresistibly sweet.

  • 1 fresh pineapple, peeled and sliced into 68 rings
  • ½ cup pineapple juice or orange juice
  • ¼ teaspoon vanilla extract
  • ¼ cup brown sugar
  • 2 teaspoons butter (optional, or replace with coconut oil)
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • ½ cup all-purpose flour
  • 2 teaspoons cornstarch
  • Vegetable or coconut oil for frying
  • Lime zest (optional, for garnish)

Instructions

  1. Prepare Pineapple: Cut pineapple into rings and remove the core if needed.
  2. Marinate: In a bowl, mix juice with vanilla extract. Add pineapple slices and let soak for 10–15 minutes.
  3. Mix Coating: In a separate bowl, combine flour, cornstarch, cinnamon, and salt.
  4. Coat Pineapple: Remove pineapple from juice (reserve marinade), pat dry, and dredge each ring in the flour mixture.
  5. Fry: Heat ½ inch of oil in a skillet over medium heat. Fry pineapple rings 2–3 minutes per side until golden. Drain on paper towels.
  6. Make Sauce (optional): Simmer reserved marinade with brown sugar and butter until thickened into a syrup.
  7. Serve: Plate pineapple rings, drizzle with syrup, and garnish with lime zest or a scoop of halal vanilla ice cream.

Notes

To keep the recipe, dark rum has been replaced with pineapple or orange juice and a splash of vanilla extract for flavor depth. You can also use coconut milk for an even richer tropical twist.
